Fried buffalo mozzarella

INGREDIENTS
buffalo mozzarella, 4, small
plain flour, 2 cups, seasoned
eggs, 4, beaten
fresh breadcrumbs, 3 cups
oil, for deep frying
lemon wedges, to serve
SALAD
radicchio, 200g, leaves trimmed
witlof, 2, leaves trimmed
red onion, 1, thinly sliced
lemon, 1, finely grated zest, juice
honey, 1½ tablespoons
olive oil, 1 tablespoon
METHOD
- Drain mozzarella and cut each into 3 equal slices. Pat dry with paper towel. Dust in flour, shaking off excess. Dip in egg. Roll in crumbs to coat generously. Transfer to a tray. Chill 10 minutes.
- SALAD: In a bowl, combine radicchio, witlof and onion. In a small bowl, whisk zest, juice, honey and oil together. Season to taste and toss through salad.
- Heat oil in a large deep-frying pan on high. Fry mozzarella slices in 4 batches, 2-3 minutes each, until golden. Drain on paper towel. Top salad with fried mozzarella and serve with lemon wedges.
TOP TIP- Try wedges of camembert or brie in place of mozzarella.
