angel hair pasta, 500g
rindless bacon, 3 rashers, finely sliced
capers, 2 tablespoons, rinsed, drained
lemon, 1, grated zest, juice
semi sun-dried tomatoes, ½ cup, drained, roughly chopped
light sour cream, 300ml
baby spinach leaves, 50g
grated parmesan, to serve
- Cook pasta in a large saucepan of boiling salted water following packet instructions. Drain, reserving 1½ cups cooking liquid.
- Melt butter in same saucepan over medium heat. Saute bacon 4-5 minutes, until crisp. Add capers and zest.
- Add two-thirds pasta (see tip), reserved cooking liquid, lemon juice, semi sun-dried tomatoes, sour cream and spinach leaves. Toss until warmed through. Season to taste. Serve sprinkled with parmesan.
