Pork and char-sui stir fry  for $2.50 per serve

INGREDIENTS

peanut oil, 2 tablespoons
pork spare ribs, 500g, chopped
capsicum, 1, seeded, chopped
long green chilli, 1, sliced
garlic, 2 cloves, crushed
sugar snap peas, 100g, trimmed
pak choy, 1 bunch, trimmed, chopped
char-sui sauce, ¼ cup
rice stick noodles, 200g,
cooked, to serve
METHOD

  1. Heat half oil in wok or large frying pan on high. Add pork ribs. Stir-fry in 2 batches 3-4 minutes, until golden and cooked through. Set aside.

  2. Heat remaining oil in wok. Stir-fry capsicum, chilli and garlic 2-3 minutes. Add peas and pak choy. Stir-fry 2-3 minutes, until just tender and beginning to wilt.

  3. Return pork to pan, add sauce. Stir-fry 1-2 minutes until meat is warmed through and sauce has thickened slightly. Serve on a bed of noodles.
